Easy Lentil Soup

One of the first soups I learned to cook was a basic lentil soup. To my surprise, the soup tasted great and the experience gave me some much-needed confidence to keep on cooking. The great thing about lentil soup is that you can take any detour you like and add or subtract your favorite ingredients to make it your own. Here’s one of my favorite bare-bones lentil soup recipes that’s easy on the budget, easy on the time and easy on the cook!

Easy Lentil Soup Recipe

2 cups green lentils (the basic lentils you find on any grocery shelf)
1 onion diced
2 garlic cloves minced
2 tablespoons extra virgin olive oil
2 quarts chicken broth
1 large potato, diced
1 teaspoon dried oregano
2 tablespoons lemon juice
freshly ground black pepper and salt to taste

How To Cook Easy Lentil Soup

Rinse the lentils with cold water and let drain. Pick out any odd-looking lentils or bits that shouldn’t be in there.

Pour the olive oil into a medium Dutch oven or soup pot and turn the stove heat to medium.

Add the onion and saute for 3 to 4 minutes until soft.

Add the garlic and potato pieces and saute for another minute.

Add chicken broth and oregano and stir everything together to mix well.

Let cook for 40 to 60 minutes or until lentils are soft.

Salt and pepper to taste.

Stir in lemon juice and serve.
